Tangy Chicken and Pineapple Bowl

This tangy chicken and pineapple bowl is on constant rotation in our house!

A recipe for tangy chicken and pineapple rice bowls with roasted peppers and onions topped with avocado!

We came up with this tangy chicken and pineapple rice bowl on a whim and now we make it once a week! It’s so flavorful and we love it so much!

CHICKEN AND PINEAPPLE BOWL

This bowl is bursting with flavors! From the grilled bbq chicken to the juicy pineapple and roasted veggies, this bowl is so tasty! Even the kids love it!

We will switch up the starch too! Sometimes we use rice, other times we use quinoa, or cauliflower rice. Either is super yummy!

INGREDIENTS:

  • 1-2 lbs boneless skinless chicken thighs

  • 1 cup of your favorite BBQ sauce

  • 1 fresh pineapple, peeled, and cut into rings with the core taken out (canned pineapple works too, just use the sliced one!)

  • 1 red pepper, diced

  • 1 onion, diced into large chunks

  • Brown rice, cauliflower rice, or quinoa

  • 1 avocado

DIRECTIONS:

  1. Marinate the chicken in the BBQ sauce for at least 30 mins

    • Use enough to cover the chicken completely (usually around 1/2-3/4 cup)

  2. Preheat the oven to 400’ F

  3. Cut the pineapple into rings, if using fresh, or drain the canned pineapple

  4. Drizzle the pineapple with a little bit of BBQ sauce

  5. Grill the chicken until fully cooked

  6. When there is about 5 mins left with the chicken, grill the pineapple until slightly charred and grill marks appear

  7. Meanwhile, prepare the veggies by cutting cutting the pepper and onion into large chunks and drizzle with olive oil and season with salt and pepper

  8. Roast the pepper and onion for about 15 mins until tender, but still have a bite

  9. Prepare your rice, quinoa, or cauliflower rice according to package instructions

  10. Build your bowl by putting the starch on the bottom, then chicken, then peppers and onions. Top with sliced avocado and an extra drizzle of BBQ sauce, if you want!

  11. ENJOY!

We love this meal! It comes together so easily and it’s so yummy!! You can also roast the chicken, if you don’t want to grill it.
