We love making a hummus charcuterie board for lunch. It’s an easy way to clean out the fridge by using up your favorite veggies.

I’m so excited to be sharing this charcuterie board along with several of my friends who are sharing some easy back to school lunch ideas. Be sure to check out all of their ideas linked at the bottom of this post. If you are hopping over from Bethany’s page, Crisp Collective, welcome! Don’t her sliders look so delish?!

Watermelon on the charcuterie board

I don’t really consider this a recipe. It’s more of a tutorial on how to create a charcuterie board with hummus instead of meats and cheeses.

This could easily be made into school lunches, however that may look for you. You could pack it all up individually by preparing it the night before for your kiddos lunches.

When we make it for lunch, we build an entire board and then dish out the veggies and pitas/crackers that the kids like. It’s a crowd pleaser and so easy to make!

Hummus board

INGREDIENTS:

  • 2 hummus flavors of your choice: we like caramelized onion and lemon dill

  • baby carrots

  • cucumbers, sliced into rounds

  • bell pepper, sliced into strips

  • pita bread

  • 1/4 cup of olives

  • watermelon, sliced

  • 1 large bunch of grapes

  • 4 stalks of celery, sliced

  • 2 handfuls of pretzel sticks

OTHER IDEAS:

  • Nuts of choice

  • Crackers of choice

  • Dried fruit of choice

  • Strawberries, sliced

  • Raw broccoli

  • Cherry tomatoes

DIRECTIONS:

  1. Toast pita in the oven by drizzling with a little olive oil and a pinch of salt

    • Toast for 5-7 mins or until golden in a 375’ oven

  2. Slice all the veggies and fruit into bite size pieces or slices

  3. Start arranging items on the board

    • I like using a large board so that things can be laid out and people can easily see it all

    • Place the same items in large ‘chunks’ with varying colors all around the board

    • Put the hummus into small bowls and place in the middle of the board

  4. Optional, but pretty: fill in any holes on the board with greenery or flowers

Cucumbers on the board

Remember, this is fun and there are no right ways to create a charcuterie board. Use foods that your family loves and it will be fun to dip and pick what you want to eat!

I like to place similar colored items across the board from each other. I think it moves the eye around the board and makes it look really nice.

Hummus and veggies

If you are packing this up for lunch, just put it all in containers with small containers of hummus. When we are home, we make the big board and then we put some on the kiddos plates. It’s so easy and convenient. Everyone gets a little bit of what they love!

It’s such an easy thing to pack up and prep ahead of time. You can also make as much or as little as you need!
