We love energy bites. They are SO easy to make and you can make a ton of them with not a lot of ingredients! These are perfect for using whatever is ‘left over’ in the pantry.

I decided to ‘bake’ with Dominic and we whipped these up in under 20 mins which was the perfect time frame for his attention span.

This is the recipe we made up, but you could substitute a lot of things for whatever you have in your house already.

ENERGY BITES RECIPE

INGREDIENTS:

  • 2 cups oats

  • 3/4 cup peanut butter

  • 2 tbsp honey

  • 1/2 cup mini chocolate chips

  • 1/2 cup chopped/crushed pretzels

  • 1 tbsp cinnamon

DIRECTIONS:

  1. Combine all ingredients in a large mixing bowl

  2. Mix together until well combined

    • Add more peanut butter if you feel they are not sticking together enough

  3. Form balls and place onto a baking sheet

  4. Place baking sheet into the freezer for 5-10 mins to firm up

    • You can leave them in as long as you’d like—we just store ours in the freezer

  5. ENJOY!

Energy bite

Literally, THE easiest recipe! No baking required. I think Dominic ate more of the dough than the actual energy bites, HA!

You could use dried fruit, chopped nuts, different nut butters, dates, chia seeds, etc. Whatever flavor profile you like best, will work for these! You just want to make sure you have enough wet/sticky ingredients to keep all of the dry ingredients together!

Ours certainly did not come out perfect, but that’s what baking with a toddler looks like ;) He had so much fun and was very proud of himself for helping me ‘bake cookies.’
