Easy Turkey Meatballs

These are by far the easiest turkey meatballs ever!  I made them a couple weeks ago and shared them on my IG stories (HERE, if you're not following me on IG) and I had lots of requests for the recipe.  I thought I would put it here on the blog so that it would be easy to refer to!

I have been making turkey meatballs like this for so long and they are delicious!  Now that Dominic is eating table food, I give him some too!  I make a big batch and then just freeze the extras for a meal the following week.  Meal prep for the win!  They freeze really well and I just take a few out for lunch or dinner the day before and they are ready to just be warmed up in the oven or microwave.

INGREDIENTS:

- 3lbs ground turkey
- 1 cups of panko breadcrumbs (have extra reserved in case the mixture is too sticky)
- 3 eggs
- 1 small onion finely chopped
- 2 tbs garlic powder
- 2 tbs onion powder
- 2 tbs dried oregano
- 2 tbs dried basil
- salt to taste (I use about 1 tbs)
- pepper to taste (I use about 1/2 tbs)

DIRECTIONS:

1.  Preheat oven to 400 degrees F and spray 2 baking sheets with cooking spray

2. In a large mixing bowl combine all the ingredients above.  If the mixture feels too sticky and doesn't stay together well, add in more panko breadcrumbs starting with a 1/2 cup, then test check the mixture and add more if needed.  You shouldn't really need more than 1.5 cups of panko.

3.  Once everything is all combined evenly, form into 1" size meatballs and place on the baking sheets.  They can be close to another, but don't have them touch or they won't cook evenly.  It will make about 48 meatballs, depending on the size of the meatballs you make.

4.  Bake at 400 degrees F for 35 minutes.  They will be a little golden brown on top and completely cooked through.  The time may vary slightly depending on your oven.  I always double check by cutting 1 open to make sure it's all done.

5. Time to eat!

Seriously, they are THAT easy!  We will make them with pasta and homemade pasta sauce if we are doing a Sunday dinner type of meal, but typically we make them and put them over zoodles or spaghetti squash.  They are delicious just by themselves with a side of rice and veggies.  We sometimes make them buffalo style and toss them in buffalo sauce when they come out of the oven.  Sometimes we will make them 'greek' style and mix in some chopped up mint and dill before baking and then dip in tzatziki sauce.  The possibilities are endless!
