Easy Butternut Squash Soup

When the weather changes, I crave this easy butternut squash soup! It is so hearty and comforting, yet still healthy!

This easy butternut squash soup is a quick weeknight meal that is so delicious!

I love making soup in the Fall and Winter. They are simple yet satisfying!

I find myself always going back to this butternut squash soup because it’s easy to make and I can make it in advance, freeze it, and reheat when we need a quick meal.

BUTTERNUT SQUASH SOUP RECIPE:

INGREDIENTS:

  • 3 LB butternut squash (I buy the pre-cut squash because it’s easier to work with!)

  • 1 apple, peeled and diced

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 1 tbs olive oil

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 tsp pumpkin pie spice

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 4 cups of vegetable broth or stock

  • 1 bay leaf

  • 1 can of unsweetened coconut milk

DIRECTIONS:

  1. In a dutch oven, heat oil and add garlic and onions on medium heat

  2. Saute garlic and onions until softened (about 4-5 minutes)

  3. Add the butternut squash and all the spices (except the bay leaf) and cook for about 6-8 minutes, until the squash is heated through and starting to soften

  4. Add the apple, bay leaf, and vegetable broth, stir everything and allow to boil (10-12 minutes)

  5. After the soup is boiling, cover and cook on low for 15 more minutes until the squash is softened all the way through

  6. Remove the bay leaf and turn off the heat

  7. Using the immersion blender or a regular blender, blend the soup until it is all smooth and there are no more chunks of apple, squash, or onion

  8. Return the soup to the stove and turn the heat to low

  9. Add the coconut milk and stir then heat everything through (about 2 minutes)

  10. Garnish with a little paprika, if you would like and serve!

NOTE: If you are making in advance, do everything up until step 8. You can freeze the soup and then when you want to serve it, heat it up on the stove and add the coconut milk then.

This butternut squash soup is so warm and yummy. It fills the house with such a delicious smell too!

If you love butternut squash, this soup is for you! It’s creamy, but not overpowering at all. You can also adjust the spices to your liking, so if you don’t like one mentioned in the recipe, just skip or replace with something else!

Best part is that this soup is a one pot meal!! Less dishes is a win for me!
