Peanut Butter Overnight Oats

We have been making these peanut butter overnight oats and it’s safe to say we are obsessed!

These peanut butter overnight oats are easy to make ahead and are filled with yummy flavors and lots of protein!

Overnight oats

We discovered overnight oats a few months ago and I have been slowly perfecting my recipe. I know we are a little late to the overnight oats party, but this is now our favorite way to start the day after our fast. We have also been fasting from 6pm-10am. We always look forward to these oats in the morning!

Our kids have now realized how tasty they are so I have been making a double batch to have extras for them.

I love making them this way as I like them pretty thick, but if you want yours to be a little looser, add a bit more almond milk.

INGREDIENTS FOR OVERNIGHT OATS

  • 1 cup unsweetened vanilla almond milk

  • 2 tbsp pure maple syrup

  • 1/3 cup peanut butter

  • 1 tbsp chia seeds

  • 1/2 tbsp cinnamon

  • 1 cup rolled oats

DIRECTIONS FOR PEANUT BUTTER OVERNIGHT OATS

  1. Combine the peanut butter, almond milk, and maple syrup in a large bowl and whisk together until the peanut butter breaks down into the almond milk

  2. Add in the chia seeds, cinnamon, and oats and stir until it’s all mixed well

  3. Store in the refrigerator overnight or at least 3-4 hours

  4. Top with an extra sprinkle of cinnamon and a drizzle of maple syrup

You can also add whatever you like to the top of your oats. Sometimes we will add bananas, apples, granola, or nuts. You could add other berries or coconut too! You could even swap out the PB for almond butter or your favorite nut butter.

This isn’t super sweet as we like using all natural peanut butter with no added sugar. The sweetness comes from the pure maple syrup and cinnamon, but it’s almost an elevated sweetness.
