Watermelon Feta Arugula Salad

This watermelon feta arugula salad is the perfect combo of salty, sweet, and spicy!

I love making this arugula salad all summer long. It’s perfect for a quick lunch or side dish. Top with some chicken if you want some added protein too!

This recipe is so simple and comes together really quickly. It’s light and refreshing and a good balance of sweetness from the watermelon, salty from the feta, and a little spicy from the arugula.

WATERMELON FETA ARUGULA SALAD RECIPE

WATERMELON FETA ARUGULA SALAD INGREDIENTS:

• 1/2 cup of watermelon, diced into small pieces

• 1 block of feta cheese, diced into small pieces

• 1/4 cup of chopped walnuts

• 1 bag of fresh arugula

• Honey Garlic Vinaigrette, recipe HERE

WATERMELON FETA ARUGULA SALAD DIRECTIONS:

1. In a large salad bowl, add the arugula, chopped watermelon, feta, and walnuts

2. Make the dressing

3. Add the dressing right before serving

4. ENJOY!

It really is the easiest salad to make. If you have extra watermelon from any summer BBQ, use it for this salad, you won’t be disappointed! You can easily adjust the ingredients to however much watermelon, feta, and walnuts you like too. You could also use different nuts such as almonds, pecans, or pistachios.
