If you’ve been following along with my IG stories, since moving in with my in laws, my husband and his brother have been making Mexican for dinner on Tuesdays and we have coined it ‘2 Italian Brothers Make Mexican Food.’ It’s been so fun and pretty entertaining watching them cook together!

We have been making grilled flank steak and it’s so delicious! We’ve been doing it over rice with salsa, but it would be perfect for tacos, quesadillas, salads, etc!

It’s really easy to make the marinade and then grill it!

INGREDIENTS:

  • 3 Limes, zested and juiced

  • 1/4 cup olive oil

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp dried parsley

  • 1/2 tsp chili powder

  • 1/2 tsp ginger

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 3-4 whole garlic cloves

  • flank steak

DIRECTIONS:

  1. Make the marinade in a small bowl by combining all the spices with limes and whole garlic gloves

  2. Place flank steak in a flat baking dish

  3. Pour the marinade over the flank steak

  4. Marinate in the refrigerator for at least 30 mins (we like to do it about an hour in advance!)

  5. Grill on high for 2-3 minutes/side. Turn down the heat to medium and grill another 5-6 minutes/side

  6. Allow the steak to sit for about 5 minutes before slicing

  7. Slice the flank steak against the grain in thin pieces

  8. Put into tacos, burritos, quesadillas, on a salad, over rice, etc

  9. ENJOY!

The steak is so yummy! We love it! It has such a great grilled flavor plus all the good spice flavor! It’s not spicy, but has lots of kick.
