Chopped Slaw Salad

This chopped slaw salad is so easy and delicious!

We also love making this quinoa salad.

I love how bright and fresh this chopped slaw salad is for summertime!

I hesitate to even call this a recipe! It is so easy to throw together for a simple lunch or light dinner.

You can really use whatever you have in the refrigerator which makes this a great salad to clear out your produce!

INGREDIENTS:

  • 1 bag of broccoli or rainbow slaw

  • 1/4 red onion, sliced

  • 3 stalks celery, chopped

  • 1/4 cup of walnuts

  • 1/4 cup of dried cranberries

  • 1 medium apple, diced into bite size pieces

  • 1 avocado, chopped

  • 2 pieces of grilled chicken

  • 1/2 cup of honey garlic vinaigrette

DIRECTIONS:

  1. Prepare all the ingredients that need to be chopped/sliced

    • red onion, celery, apple, avocado

  2. Combine the slaw with the chopped onion, celery, apple, chicken, walnuts, and cranberries

  3. Add the vinaigrette and toss to coat

  4. Gently add the avocado and toss it all together

  5. ENJOY!

It’s SO easy to make this slaw salad. You can substitute the chicken for another protein or leave it out all together if you want this as more of a side dish.

I have used sliced almonds instead of walnuts before and it was so good. I’ve also used cucumbers instead of celery and it’s delicious! So many options!
