We love making this black bean salsa! It’s so easy and delicious. We bring it to parties because it’s so simple to double. We also love having it on top of grilled chicken or steak!

It’s such a pretty and festive salsa that requires little to no work.

INGREDIENTS:

  • 1 can black beans, rinsed and drained

  • 1 can sweet corn, drained

  • 1 tomato, diced

  • 1/2 red onion, diced

  • 1 bell pepper, diced

  • 4 green onions, sliced

  • 1 jalapeno, minced

  • 2 cloves of garlic, minced

  • 1 lime, zested and juiced

  • 1 tsp salt

  • handful of cilantro

DIRECTIONS:

  1. Drain and rinse the corn and black beans

  2. Add the corn and black beans to a large bowl with the remaining ingredients

  3. Mix everything together and taste

  4. Add additional salt or lime, if needed

  5. Chill for at least 30 mins in the refrigerator

  6. ENJOY!

You can use it as a dip and enjoy with chips or add it into tacos. Use it to top grilled chicken or steak. Add it into salads or eat as is. It’s so refreshing and light!
